Cooling Cucumber Raita

Cool, creamy and oh-so-refreshing — Raita is the perfect partner to any spicy feast!

Traditionally made with yoghurt (or curd) and whatever fresh veggies, herbs and spices are on hand, it brings balance to the plate and calm to the belly.

We love making ours with coconut yogurt and serving it chilled alongside our curry-roasted cauliflower — the tangy yoghurt, crisp cucumber and hint of mint create the most delicious contrast. Plus, it’s good for you too: the probiotics in yoghurt and mint’s digestive magic make this side dish as healing as it is tasty.

Ingredients:

1 ½ cups plain coconut yoghurt
1 cucumber, grated on the finest setting with skin left on
2 cloves garlic, minced
Handful of fresh mint, chopped finely
Handful of fresh coriander, chopped finely
Juice of 1/2 lemon
Salt to taste

Method:

  1. Place yogurt, cucumber, garlic and herbs into a bowl, stirring until combined
  2. Stir in the lemon juice, and add salt to taste.
  3. Enjoy!
